Once you know the difference between a chocolatier and a chocolate maker, you will respect both of them. A chocolate maker, or manufacturer, produces chocolate, not chocolates. A fine distinction, to be sure. The chocolate maker processes raw cacao beans into a product such as chocolate liquor or couverture. The chocolatier makes confectionery from that chocolate.
Every chocolatier we've interviewed expressed the highest admiration for the master chocolate maker—the one who creates the basic ingredient the chocolatier will work with—couverture. The chocolate makers, after executing the many steps required to finally achieve a finished chocolate bar, are excited to turn over their product to an inspired chocolatier to see what exciting creations will emerge and excite the palates of awaiting chocolate connoisseurs. Chocolatiers are the artisans; they imagine and create flavors, textures, and designs that complement the chocolate and elevate the sensory experience.
