Originally a Roman settlement in 1st century AD, Annecy become part of France when the Dukes of Savoy claimed it as their own. They took up residence in the beautiful castles throughout the city. Though the Dukes of Savoy later moved out, they left behind a legacy that will never be forgotten: Savoyard food. The Savoyard diet is based on a high concentration of cheese and potatoes. Specialties such as fondue Savoyard, gratins, and tartiflette are popular local dishes.
